Dal Pancake

A savory pancake made from soaked dal and vegetables

Ingredients
  

  • 1 cup yellow dal soaked in water overnight
  • 1-2 tbsps fresh cilantro
  • 1 cup blanched kale
  • 1 tbsps mint
  • 1 carrot peeled and grated
  • 1/4 cup chopped red onion
  • 1/4 cup chopped red bell pepper
  • 1 tbsp freshly grated ginger
  • 1 chili pepper seeded and chopped
  • Juice of 1 lime
  • 1 tbsp turmeric
  • 1 tbsp powdered garlic
  • salt and black pepper to taste

Instructions
 

  • Soak yellow dal in water for at least 8 hours or overnight. Once this time has passed, drain water from dal and place dal in a food processor. Process unttil smooth but not runny. You may need to add a little water during this process. When finished, add dal to a large bowl and add in all remaining ingredients and mix well. Place mixture into a prepared cast iron pan. Bake at 350 degrees for at least 20 minutes. Carefully remove from the oven and brush with a tablespoon of ghee. Place back into the oven and bake for another 15-20 minutes. Remove from oven, cut into slices and serve warm with cilantro/kale chutney.
    This is a delicious and nutritious pancake.
